Game Day Appetizer: Artichoke Dip
My husband loves watching football and is excited that the Seattle Seahawks are going to the Superbowl! I wouldn’t call myself a football fan. However, I do occasionally like to watch the game with my hubby and root on his team. The highlight for me is spending time with him and of course eating all the yummy snacks! Since the big game is coming up, I thought I’d share our favorite game day appetizer: Artichoke Dip. My mom found a similar recipe in a newspaper several years ago, but we have adapted it over the years. This is one of the simplest appetizers you will make and one that will leave your guests wanting more! It is always a big hit whenever Marissa and I make it and everyone always asks for the recipe. If you are hosting a Super Bowl party you will definitely want to give this appetizer a try!
- 1/2 Cup Mayo
- 1/2 Cup Sour Cream
- 14 oz Can Artichoke Hearts, drained & chopped
- 4 oz Can Diced Green Chilies
- 1/3 Cup Grated Parmesan Cheese
- 1 Cup Grated Cheddar Cheese
- Sliced Green Onions (optional)
Preheat oven to 350°. Combine mayo, sour cream, artichoke hearts, green chilies, Parmesan cheese and 1/4 cup cheddar cheese. Pour mixture into an oven safe baking dish. Sprinkle the remaining 3/4 cup cheddar cheese on top. Bake for 30 minutes, or until bubbly and warmed throughout. Garnish with sliced green onions. Serve with tortilla chips, crackers or toasted slices of a baguette. Enjoy!
*If you don’t like sour cream, you can make with 1 cup of mayo instead. Or if you don’t like mayo try using all 1 cup sour cream. To make this recipe a little lighter, I use light mayo, light sour cream and reduced fat cheddar cheese.
