Quick and Easy Meal: Italian Quesadilla
I am always looking for quick and easy meals to have for lunches and dinners. Today I want to share with you a spin on the classic quesadilla. My dad didn’t cook or prepare meals very often, but when he did it was more like an experiment. He used to put all kinds of things on our quesadillas and they were always yummy! I am a big fan of Italian subs with salami and pepperoni, so I decided to put those ingredients in a quesadilla.
-grated cheese (I used jack cheese)
-hard salami sliced very thin
-hot sauce (I used Cholula)
-lettuce chopped fine
Heat up your cast iron skillet on medium. Turn down to low once heated. Put your flour tortilla on the skillet and sprinkle your grated cheese on half of the tortilla. Add the salami, mushrooms, onions, and hot sauce. Let it heat up until the cheese is melted. Then add the lettuce. Fold the flour tortilla so that it is closed with all the ingredients inside. Flip over and cook until tortilla is at the desired crisp. Enjoy!
